When you miss the local ingredients…
For cooking traditional recipes in a truly authentic way you should have local raw ingredients at your disposal, which encapsulate the truest flavors of the territory.
Unfortunately, often these ingredients are difficult if not impossible to find if you live far away.
This is why I have long felt the need to enhance my story telling of the traditional Ligurian recipes with the possibility of easily find the original ingredients needed to prepare them.
Finally, my wish has come true!
How I imagine my Ligurian grocery!
If it were a physical place, it would be a tiny shop, with a large ‘alimentari’ sign in 1970s red lettering on a white field, crates of potatoes, onions and a few seasonal vegetables outside the door, braids of garlic hanging from the doorframe and the ever-present curtain of fluttering plastic strips.
Inside wooden shelves laden with preserves, pickles, wine and biscuits, a display case with cold meats and cheeses and a wooden cutting board for fresh bread. On the door threshold me, sitting on a straw chair with a checkered apron and a crossword puzzles magazine.
For the time being you and I should just imagine all this slightly retro romantic phisical place. But eventually now I can achieve the same goal: to give you the possibility to do your Ligurian grocery and cook Ligurian recipes as if you were a local!
How it came true
This project is born from the collaboration with Palatifini , an on-line platform that sells Italian artisanal food products, born years ago right here in Genoa from my friend Roberto Panizza’s passion for good food, the Italian territory and top quality artisan products.
Together we have created a section on the Palatifini website called ‘La bottega di A small kitchen in Genoa’.
There you will find 100% Ligurian products that I have selected for you, products that normally pass through the shelves of my own pantry.
From basic ingredients for cooking to ‘complementary’ products such as wines, EVO oils, liqueurs and sweets.
You will find everything you need to prepare the authentic Genoese pesto (yes! even bunches of fresh Genoese PDO basil) as well as fresh, seasonal local fruit and vegetables.
Then, if you’d like to give a taste of Liguria as a present (perhaps at Christmas or for a special occasion), you’ll have the possibility of creating a gift box with all the products you want (and my cookbook too, if you like!).
